The Story
Xanthan Gum is a thickening agent (E415) and emulsifier which is commonly used in gluten free sweet and savoury baking and is also communly used as an additive in gluten-free pizza dough as a binding agent to improve the texture and elasticity of the dough.
Xanthan Gum is often used in combination with Guar Gum which is a good emulsifier but does not exhibit the same gelling properties of Xanthan Gum.

Gluten free. Heat stable and tolerant of strongly acidic and basic solutions.
Storage:Â Store in an airtight container in a cool, dry place, away from direct sunlight.
